King Oyster

Pleurotus eryngii

King oyster is cultivated for its dense, meaty stem and compact brown cap. It is less aggressive than pearl oyster and rewards precise block preparation, cool fruiting and close control of air. Commercial forms vary, so morphology can differ even under similar conditions.

  • Very wide caps and short stems indicate abundant air, while extreme stretching indicates excessive carbon dioxide.
  • Slow, patchy colonisation can reflect wet substrate, weak spawn or bacterial competition.
